약 50개 이상의 L-α-아미노산이 펩티드결합(산아미드결합)으로 연결된 고분자질소함유화합물의 총칭. 단백이라는 단어는 독일어 Eiweiβ를 번역한 것으로서, 대표적인 단백질의 하나인 흰자위를 의미한다. 국제적으로는 프로테인이라고 불렸는데, 이것은 스웨덴의 J.J. 베르셀리우스가 <생체의 구성단위로서 또 대사물질로서 가장 중요한 물질>이라는 의미에서 그리스어 proteios(중요한 것)로부터 프로테인이라고 할 것을 제안했다.
